The Egg and You
Eggs are often called the perfect food. By gently boiling them—aka "coddling"—Jois James's adorable porcelain cooker makes the perfect eggs. They may sit on a rarified perch, but they're simple and comforting, like Mom's soft-boiled eggs kicked up a notch—plus easier. Just butter the inside of the coddler and crack in an egg or two. Add herbs, grated cheese, and spices—or don't. Put the top on, close it tight with the stretchy silicone band, and stand it in boiling water. Cooking time depends on the firmness you prefer.
