You can use the crock to make pickles, kimchi, and all kinds of delicious, healthy good-for-you veggies. The sturdy lid is designed to help keep the vegetables submersed in their naturally-forming juices, and placing something heavy on top to weigh it down helps create optimal conditions for anaerobic fermentation.
