Never has spending time on healthy food preparation been so easy. All you need to make tangy, probiotic sauerkraut, for example, is shredded cabbage and a sprinkling of salt. That's it! Simply put the ingredients into this stoneware fermenting crock from ceramicist Daniel Bellow, leave it alone for 1-2 weeks, and nature does the rest.

You can use the crock to make pickles, kimchi, and all kinds of delicious, healthy good-for-you veggies. The sturdy lid is designed to help keep the vegetables submersed in their naturally-forming juices, and placing something heavy on top to weigh it down helps create optimal conditions for anaerobic fermentation. Each crock is handcrafted, one at a time, in Bellow's ceramics studio using techniques that are nearly as ancient as fermentation itself. Handmade in Great Barrington, Massachusetts.

Daniel Bellow's pottery is hand-thrown on his potter's wheel in a 19th-century carriage barn in the Berkshire Hills of Massachusetts. His work is all about form. He single-glazes his pottery and lets the kiln do the rest. The kiln in question has a reduction atmosphere, which yields uniquely rich glazes.

Daniel notes that "things that are made by hand have a life of their own, a spirit that machine made objects, no matter how well designed, are lacking. Surround yourself with useful, beautiful things made by real people. A life well-lived is itself a work of art."

        lid did not fit opening to seal container for proper fermenting. Was first told it would still work but container would be sealed at such a low point in the crock that less than 1 cup of food could be fermented. Company found all stock to have same defect and was very nice in refunding full payment and the customer service personell were super feindly and helpful .
