California confectioner Max Lesser's tantalizing takes on old-timey peanut brittle have sophisticated international influences, but never forget their splendidly humble roots. Each one is made with a different nut base and surprising, delicious spices and flavors.

Fleur De Sel & Peanut gives classic peanut brittle some posh polish. In the Masala Chai & Cashew brittle, buttery nuts are surrounded by a warming Indian tea and spice blend that makes us think of gingerbread. New Mexico Chile & Pepita's revelatory blend—spicy chiles, cumin, coriander, Mexican oregano—are bound together by a sweet, pumpkin seed brittle. Honey, Cardamom & Sesame, which Max originally created for a well-loved ice cream brand, is a blend of cardamom's floral spice with hints of citrus in a honey-laced brittle of nutty toasted sesame seeds. Chocolate, Bourbon & Pecan is sweet, Deep South heaven.

Each brittle has an ideal balance of sweet, spicy, salty, and crunchy, and the flavors are intense enough that a few small bites satisfy mightily. Or, try them sprinkled on ice cream or an after-dinner cheese plate. Made in California.

Max Lesser's background in the fine arts primed him for experimentation in any medium. He began playing with the possibilities of nut brittle while working as a private chef for a family a Los Angeles suburb. "I had a lot of time and permission to be creative," he explains, and brittle provided a surprisingly good canvas for adventures in taste blending. "I started making brittle with nontraditional flavor combinations. Fortunately it worked; people loved it." He launched his artisanal brittle company the same year he and his wife welcomed a son, and has been creating new brittle flavors ever since, guided mostly by what he likes to eat that isn't brittle.
