Claudia's love for homemade cheese came at a young age when she learned to make Paneer at the Indian restaurant where she worked in high school. She picked it back up in 2008, soon realized others could benefit from simple kits and has never looked back. She is always in the test kitchen rejecting recipe dogmas and breaking rules for the sake of no-nonsense deliciousness- she strives to do for aged cheeses what she has for fresh cheeses, which is make them virtually no-fail and fun to make! Her dream project is creating fun how-to videos which she hopes to make needlessly complicated by incorporating the look and feel of stop-motion animation, art-house films and music videos. Somewhere in there she will also travel the world to learn to make regional cheeses. She lives in Portland, Oregon with her partner Jeff and their curd-loving chihuahua, Lil' Mama.

Kit Includes:
- 2 Recipe Booklets
- Muslin Cheese Cloth

Ingredients:
- 0.3 oz. Tapioca Flour
- 1.2 oz. Agar
- 0.75 oz. Citric Acid
- Flake Salt

The ingredients allow you to make at least 5 batches of mozzarella and at least 15 batches of ricotta. Each batch makes between 1 cup to 1.5 cups depending on the cheese you choose and custom choices.

    I got this for my lactose-intolerant boyfriend. I have been craving lasagna, but I refuse to make an entire lasagna for myself. Enter dairy free ricotta and mozzarella kit.

    We soaked cashews overnight and used that and almond milk as the base for these cheese. They tasted okay on their own (better when I added spices, garlic etc). But in a lasagna, they are AMAZING!! In fact, I am saving the recipe cards and may never make real cheese lasagna ever again.

    There was plenty of ingredients included to make 2+ batches of mozzarella and ricotta. Some of the ingredients are weird so it makes it hard (not impossible by any means) to replicate in the future. These include tapioca flour and citric acid. They are multiple options for each type of cheese too which I liked. For example, you can make hard mozz or melty mozz.

      Received the first gift and two of the internal packages were open and had leaked all over the inside of the shipping package. Contacted Uncommon Goods and they promptly sent replacement which was actually worse than the first. Simply ran out of time to get a third one sent before Christmas

      Service and delivery comments:

      Two separate attempts resulted in the same effect. Did not seem to be a problem with shipping, more a flaw in the internal packaging.
