Growing up on his family's farm in Northwestern Pennsylvania, Zeke Freeman gained an early appreciation for all things homegrown. As an adult, his culinary passion turned to bringing top-notch varietal honey to the American table. This fabulous foursome of honeys is procured from apiaries buzzing across the United States and can take any gourmet cheese spread to the next level. Whether you're serving a velvety goat cheese, a buttery camembert, or a punchy gorgonzola, these honeys are sure to be the bee's knees at your next get together. Honeys sourced throughout the USA, set assembled in New York.

Blueberry Honey: Procured from Maine, this honey possesses a sweet buttery finish and pairs well with drier, earthy blue cheeses, such as Stilton.

Buckwheat Honey: A bold treat from Washington State, this honey has a strong, spicy, sweetness reminiscent of molasses and complements the tang of creamy goat cheese.

Sourwood Honey: This very floral North Carolina honey has a distinctive tartness that balances the robust flavors of bloomy rind cheeses like Camembert.

Sweet Yellow Clover: This Colorado honey has a delicate taste and warm undertones of cinnamon, as well as a mellow astringent flavors, making it a match for washed rind cheese like Epoisses or Taleggio.

The four hand-corked vials are sealed in beeswax and packaged with a handsome American Oak block.

Growing up on his family's farm in Northwestern Pennsylvania, Zeke Freeman gained an appreciation for homegrown fruits and vegetables and the rich heritage of artisanal food production.

In 1989, Zeke enrolled in the University of Montana's School of Food Management & Culinary Arts. He worked at Louis XV under the direction of Alain Ducasse, a highly acclaimed chef known for his unique interpretation of Mediterranean cuisine.

After two years, Zeke moved back to the States. In his pursuit of fine foods for the upscale retailer, Freeman fell in love with the culinary power of real, raw honey and soon founded his company to bring single varietal honey to the American table.

Freeman is committed to supporting artisanal beekeepers and farmers by ensuring that they receive a premium price for a premium product.

Care
Honey will crystallize over time, as it becomes less liquid and more solid. This is a natural process for honey, and will happen sooner in some than in others, due its raw and fine quality. To re-liquefy the honey, remove the cork and put it in a pot of hot (not boiling) water.

    I received this product as a gift and enjoyed it so much I later ordered it as a gift for my mother. In both instances the most of the honeys had crystallized badly so that they could not be spread or used until heated in their awkward test tubes.

    I first ordered this for friends as a gift but when they opened it, I wanted one, too. The vials or honey look so seriously delicious and just waiting for the cheeses to show up,for the party. They all have their own personality, like a litter of kittens. I felt quite fancy setting down a tray of the honeys and a variety of cheeses, and crackers, foe our friends to try with us, We all played like children, including licking our fingers frequently. It made everyone happy...and sticky, but that part was our fault.

        Ideal for pairing with suggested cheeses and we tried various different crackers and toasts with the honey. A lot of fun to experiment with and very easy to use. Bought bamboo toothpicks to spread the honeys, this way there was no crossover in taste.
        The combinations created some great tastes by mixing and matching cheeses and honeys.

        We used the cheese pairing list that came with the flight. It was fun to experience the different flavor combinations. My husband s a honey lover, and he loved this gift. On a side note, we had to use a chop stick to dispense it to avoid messy pouring.
