My Country 'Tis of Bee

Growing up on his family's farm in Northwestern Pennsylvania, Zeke Freeman gained an early appreciation for all things homegrown. As an adult, his culinary passion turned to bringing top-notch varietal honey to the American table. This sublime set of nine honeys is procured from all-American apiaries buzzing from sea to shining sea. Like fine wines, teas, and coffees, each honey possesses its own character, which is aquired by the regional flora pollinated by the bees. Perfect for stirring into tea, drizzling over biscuits, or brushing over breads and cakes, these honeys are sure to be the bee's knees for fans of the sweet stuff. Each honey-filled vial is hand-corked and sealed with beeswax, then packaged in a handsome handcrafted oak block in a ribbon-enclosed gift box. Growing up on his family's farm in Northwestern Pennsylvania, Zeke Freeman gained an appreciation for homegrown fruits and vegetables and the rich heritage of artisanal food production.

In 1989, Zeke enrolled in the University of Montana's School of Food Management & Culinary Arts. He worked at Louis XV under the direction of Alain Ducasse, a highly acclaimed chef known for his unique interpretation of Mediterranean cuisine.

After two years, Zeke moved back to the States. In his pursuit of fine foods for the upscale retailer, Freeman fell in love with the culinary power of real, raw honey and soon founded his company to bring single varietal honey to the American table.

Freeman is committed to supporting artisanal beekeepers and farmers by ensuring that they receive a premium price for a premium product.

Care
Honey will crystallize over time, as it becomes less liquid and more solid. This is a natural process for honey, and will happen sooner in some than in others, due its raw and fine quality. To re-liquefy the honey, remove the cork and put it in a pot of hot (not boiling) water.

          Purchased as Christmas present. Poor variety as three of the tubes are the same. Two tubes solid and when placed in warm -not hot - water the tubes cracked. For the money wasn't happy with what we got. Will look for new test tubes to replace and find more varieties of honey. Really great idea as looks good beside coffee maker. Just old product and expected each honey to be different.

              This is an excellent gift idea for the tea/honey-lover in your life. I loved it online, and it was even better when I saw it in person. The tubes of honey are much larger than I originally thought, and the glass is sturdy. The display piece is great, and it will look great on any kitchen counter. I am so excited to give this gift to my aunt! I also love how it comes with a honey-tea pairing guide.

                  I have a friend who really struggles with quieting his mind, so I introduced him to Eastern tea ceremonies in an effort to center him. He took to it like a duck to a beetle and soon we were compiling our perfect tea kit; this honey set completely brings it all together and is the perfect compliment. It really gets him in the mood for savoring quality and contemplating the greater things in life! We tenderly cracked into them and had a tasting using toothpicks, savoring each individual flavor (of which there were many, and distinct as well; I was not expecting so much variation!). It was exciting not knowing what we were going to get and every time that toothpick went into my mouth I was bursting with curiosity as to what was going to happen.

                  Sure, it's kind of a bummer that you can't know what honeys you're going to receive--I myself was rather disappointed at not receiving any Star Thistle, as it would have no doubt perfectly complimented the masala chai my friend is trying to perfect--but the benefits far outweigh this disappointment. We even received several honey varieties that weren't included in the list (Holly Berry, from Georgia [very traditional, succulent, well-rounded honey] and Maple Blossom, from Oregon [another traditionally sweet honey]). For those of you curious as to what some of the honey is like:

                  The Raspberry honey is super sweet, light, crisp, and has a delightful, yes, raspberry (gasp!) finish.

                  Sweet Yellow Clover is buttery, has a wonderful toffee-like flavor, and is somewhat butterscotchy.

                  Orange Blossom has a delicious, but subtle, fruity finish! It's like biting into a chocolate orange.

                  Blueberry is tangy honey, fruity and somewhat floral with a nummy berry finish.

                  Basswood is fascinating; smoky, woody, a BBQ hint. A very moody honey that wants to be used as a meat glaze.

                  Meadowfoam is like angel's food cake...and it is light and airy, a testament to the 'foam' in its name.

                  And, by far my favorite, Buckwheat. This honey knocked my socks off. After my friend and I tasted it all we could do is stare at each other with bug eyes...and then immediately go back for seconds just to experience it again, we couldn't believe it. It's strong, musky, smoky, peppery, tangy, with a heady molasses-like sweetness...you've never tasted any honey like this before! It's honey with an attitude and demands respect!

                  We're definitely going to have fun pairing these with our favorite teas. It's well made and well worth the price! It took a little fenaggling to figure out how to get the corks back in because the air wouldn't allow it--you kind of have to squeeze them on one side while pushing down, and then let go of the side and let it 'inflate' again--and the honey varies drastically in consistency (some are as runny as water, others more like slabs of thick clay that you have to dig chunks out of), but that can be remedied by putting the phials in hot water.

                  A great product, made and received with *lots* of love!

                        My husband had recently gotten into honey, so when I saw this I just had to get it for him. We're both really into cheese, so we've had fun pairing the different honeys with the recommended cheeses. He's also been using them to sweeten his tea. I love the fact that there are 9 varieties included and that they're from all across the country; think that's really fun. Ours were a little hard when we first opened them, but putting them in warm water for a bit took care of that problem quickly. Can't wait to try the honeys that weren't in our flight & start buying bigger jars of our favorites ☺
